I love, love, love, to go out to dinner, but unfortunately, our budget just doesn’t allow for it too often.
Back in the days when we were blowing our food budget on a weekly basis by going out to eat, one of my favorite places to go was Applebees, for their Oriental Chicken Salad.
The Recipe: Applebees Knock Off Salad
Tangy, creamy, and filling, all with a hint of tang that is the signature of Asian cuisine, this salad, while not healthy always seem to satisfy my cravings.
Since we’ve cut back on eating out, I’ve been on the lookout for knock-off recipes, like this one from Six Sisters Stuff that I can make healthier but still tasty and MUCH more wallet-friendly.
Then end result is a remarkably fast, but filling and tasty salad that even the hubs will eat!
- 6 T Honey (or 2 t. Stevia + 2T. Water)
- 3 T Rice Vinegar
- 1/2 cup Olive Oil Mayo (I use the olive oil kind or greek yogurt)
- 2 t. Dijon Mustard
- 1/2 t. Sesame oil (more if you like a really smoky flavor)
- 4 oz grilled chicken strips
- 1 cup bagged cole slaw mix
- 1 cup chopped lettuce
- Sliced Almonds
- Won Ton Strips to taste
- Mandarin Oranges if desired
- Mix all of the dressing ingredients, set aside
- Mix together the cole slaw mix and the chopped lettuce. Top with grilled chicken strips, sliced almonds, and won ton strips and mandarin oranges, if desired. Top the entire salad with desired amount of dressing and service immediately. The dressing will make more than 1 serving.
